Creamy Chicken, Broccoli and Leek Pasta Bake
Ingredients
Spring Onions – 2 thinly sliced
1 Broccoli (diced)
2 Leeks (sliced)
200ml Milk
350g Chicken Breast (diced)
1 clove Garlic
4 tbsp Green Pesto
85g Cheddar Cheese
250g Philadelphia Light
Salt and Pepper to season
Method
- Pre-heat fan oven to 180 degree Celsius.
- Heat 1 tbsp of oil in a frying pan, add diced chicken and reduce to medium heat. Fry
until chicken is browned and white in the middle. - Add sliced leeks and garlic to the pan and fry for 5 minutes.
- In the meantime, bring a pan of water to the boil. Add the pasta and broccoli and
cook for 8 minutes. - Take the frying pan off the heat and add cream cheese, milk and pesto – stir until
melted. - Add the cooked pasta and broccoli back to the frying pan, stir together. Season with
salt and pepper. - Place the mixture into a oven-proof dish and sprinkle cheese and sliced spring
onions on top. - Bake in the oven for 20-25 minutes or until cheese browned.
