Rhubarb Fool

Ingredients
For the Rhubarb Mix
- Rhubarb 400g – cut into 1cm chunks
- Caster Sugar 150g
- 1 Orange – zested and juiced
For the Fool Mix
- Double Cream 200ml
- Icing Sugar 2 tbsp
- Natural Yogurt 200g
- Biscuits Crumb
Method
- Cook the rhubarb: Place Rhubarb, sugar, orange juice and zest into a saucepan over a medium heat. Cook for 10-15 minute, stirring often, until rhubarb has broken down but about 1/3 of the rhubarb chunks remain. The mixture will be thick, glossy and pink. Immediately pour mixture into a heatproof bowl and keep refrigerated until needed.
- For the Fool: Whip the cream and sugar in a bowl until it forms soft peaks. Fold in the yogurt and most of the rhubarb mixture. The mix will have streaks of pink/red rhubarb.
- Assemble: Spoon the fool mixture into four desert dishes. Add remaining rhubarb mixture and some crushed biscuit to the top of the desert. Enjoy!
